Panther Coffee is officially here.

Panther Coffee is a specialty coffee company built on sourcing, roasting, and serving some of the finest coffees in the world. They roast in small batches, work directly with producers, and build long-term relationships that prioritize quality, transparency, and care over convenience. Their mission is simple: serve exceptional coffee while creating partnerships that are mutually beneficial from farm to cup.

Founded in Miami in 2010 by Leticia and Joel Pollock, Panther Coffee started as a single roastery café in Wynwood and quickly became a cornerstone of the U.S. specialty coffee movement. With over 40 years of combined experience, Leticia and Joel remain deeply hands-on—traveling to origin, selecting coffees seasonally, and guiding roasting decisions with intention. Today, Panther spans cafés, wholesale partners, and roasteries across Florida, New York, and Michigan, including a strong connection back to Joel’s hometown of Traverse City.

At the core of their work is sourcing that actually means something. They build direct relationships with producers across Latin America, Africa, and beyond, choosing coffees based on what is tasting best in season. That means real transparency, real collaboration, and coffees that reflect where they come from—not something flattened into a formula. Their sustainability work runs alongside this, from supporting infrastructure projects at origin to repurposing materials and composting production byproducts in their local communities.

Right now in the Dune Bird tasting room, we’re pouring their Casa Blend. Smooth, balanced, and easy to live with, it leans chocolate forward with soft caramel sweetness and a clean finish that keeps you going back for another sip.

It’s coffee with intention. The kind that fits right into a space that cares about detail, experience, and doing things the right way.

We’re proud to work with Panther because they move the same way we do—intentional sourcing, respect for process, and no shortcuts, just good work made well.
